Oatmeal Raisin Cookies
After visiting the doctor the other day I went to Asian store and bought a packet of oatmeal raisin cookies. It was from famous bakery chain in the Philippines it reminded me of childhood whenever we see Dr Acuna our beloved pediatrician of Manila Children's Hospital we get to have a meal at that restaurant and chance to pick up any treat we want from that famous bakery which i will not mention . Some things have not changed in this millennium my teenage son had a vaccine at school and was given a cookie after the shot, i had needle poked on my neck for a thyroid check , I deserve a cookie too . But i was quite disappointed the bakery is now exporting products worldwide but the cookies are not how I used to remember it. There's hardly any raisin, not even a single whole raisin one out of 8 cookies in the packet. I can't believe it so here is my recipe for my favourite cookie ever.
Oatmeal Raisin Cookies
Ingredients :
1 1/2 cup of raisins ( sultanas for Australian readers )
350 grams of butter ( softened in room temperature)
2 large eggs
3 cups Quick oats
2 cups plain flour
1tsp baking powder
1 cup brown sugar
1 cup white sugar
1 tsp salt
1 tsp vanilla extract
To make it :
1. Preheat the oven to 190 degrees celsius . Line the a cookie sheet with a baking paper . In a large mixing bowl combine the flour , baking powder and salt.
2. In the bowl of an electric mixer , beat the butter in high until light and fluffy for about 3 minutes , scrape the bowl with the spatula then beat in the eggs , add the vanilla until well blended. Turn the beater on low speed and slowly add in the flour mixture . Scrape the side of the bowl again then add the oats and the raisins .
3. Using 2 spoons round up about 1 1/2 tablespoons of the cookie dough and place it into the cookie sheets about 2 inches apart . Bake for 12-15 minutes , until slightly golden around the edges . Cool in the pan for 5 minutes before moving into the wire rack to completely cool.
This recipe makes about 24 cookies . Enjoy!
