Peach Crumble Bars
Stone fruits are in season, the other day I bought a punnet of peaches for $ 2.50 (that's cheap) . It's almost mandatory for school children to bring fruits in their lunchboxes and eat it everyday . However since school holiday I have been a bit lazy to cut the fruits since we don't needed it for lunchbox and I have trusted the kids that they will just take it in the basket and just bite . The kids has been busy as well with the Nintendo switch and Ipad so the fruits that gets eaten fast are the ones that doesn't require too much effort the blueberries and grapes gets eaten first . Poor peaches has been left in the basket and the skin turned wrinkly but it was still firm to touch. I don't like wasting food so I turned it into a dessert that the whole family would love.
The crumble part of this recipe is fantastic! it will work with any fruits you like or want to save like apples , blueberries , plums, nectarines, apricots to name a few.
Peach Crumble Bars
Ingredients
For the Crumble : 1 cup of butter cut into cubes
1 large egg lightly beaten
3/4 cup of sugar
3 cups of plain flour
1 teaspoon of baking powder
1/4 teaspoon of salt
For the filling : 5 to 6 peaches diced
1/2 cup of sugar
1 tablespoon of cornflour
1/4 teaspoon cinnamon
1 tablespoon of lemon juice
For the icing : 1 cup powdered sugar
1 to 2 tablespoon of milk
To make :
1. Preheat the oven to 180 degrees . Lightly grease 13x9 inch rectangular baking pan .
For the crumble:
2. In a big mixing bowl put together the sugar, flour, baking powder and salt. Using a pastry cutter , cut in the butter until it looks like sand . Add in the lightly beaten egg and mix until the dough starts to clump together but still crumbly. Take about a little more than half of the crumble and press into the baking pan.
For the filling:
3. In a big bowl mix together the sugar, cornstarch, lemon juice and cinnamon. Add the diced peaches mix well . Pour the mixture over the crumble crust and spread evenly on the pan .Top up the peaches with the remaining crumble mixture.
Bake at 180 degrees for 40-45 minutes ( or more till golden brown , oven temperature may vary). Cool in the pan completely then place in the fridge to chill for at least an hour
before cutting.
For the icing:
4. For the icing powdered sugar and milk and drizzle on the bars before serving.
Enjoy on it's own or warmed up in the microwave and served with a side of whipped cream or ice cream .
