Christmas at the Beach
Most Christmas Songs I grew up singing was about how cold weather and snow , It doesn't snow in the Philippines but December is one of the cooler months, I remember one of my colleague's dream was to experience white Christmas so she thought its was a jackpot when she fell in love married a foreigner from down under , Oops little she realised that Christmas in Australia is scorching hot summer ! So forget snow ,chestnut roasting and hot chocolate with marshmallow toasting . We are in for a different kind of toasting Christmas down under is about sand , sunblock and surf, this year we have decided to have a proper Aussie Christmas in the beach , We have driven 6 hours to go far North away from the madness of the extended family's Christmas rush . For the past Christmases I found myself exhausted from helping my mom host the party , this year a gift to myself and my little family is to relax and have a no fuss Christmas. Instead of having too many material presents under the tree we opted to make special memories at Coffs Harbour . Our Christmas Eve dinner was fish and chips from the Jetty and we picked up crabs and oysters for our Christmas picnic .
We stayed at the Opal Cove Resort , is a beautiful resort and it has an access to Korora Beach, It has big swimming pool with water slide that the kids love .
Instead of paying double price for the Resort's Christmas lunch and were not real fan of the Christmas pudding anyway we have chosen to have a buffet breakfast .
After breakfast we walked to the beach . Korora Beach is so peaceful were the only ones at the beach on a perfect Christmas summer day. We had our simple picnic lunch of mango , spanner crabs, prawns,oysters and our home cooked ham.
This has been one of the best Christmas ever , no stress , no slaving in the kitchen and huge cleanup and washing up after.
Its not all about the big presents under the tree, but finding joy in discovering the things that the tide brings. Merry Christmas all!
