Too Hot for buttercream cake , let's make mamon
We have decided to celebrate my hubby's birthday at Western Sydney SuperPark . It's a good time as well as the rest of the kids from other school are still in their classrooms the flying fox and the swing is ours !!! yey! I would like to make a beautiful cake however it was expected that the mercury will rise to 40 degrees today .
So i thought of mamon , it's a Filipino sponge cake topped with butter ,sugar and grated cheese. I made a it in a square pan to resemble a cake but that one didn't really turned out good so stick to the muffin tin . Here's the recipe
Mamon
Ingredients : 4 eggs and 2 egg whites
1 and 1/3 cup of plain flour
1 teaspoon baking powder
3/4 cup sugar ( divided it into 1/2 and 1/4 cup)
1 teaspoon vanilla extract
1/4 cup milk
1/4 cup vegetable oil
2 tablespoon water
1/4 teaspoon cream of tartar
butter , grated cheddar cheese ( i used Kraft ) more sugar for sprinkling
To make the mamon :
1. Preheat the oven to 180 celsius , line 2 muffin tin with cupcake liners ( 24 cups all together)
2 Separate the egg yolks and the egg whites.
3. In a bowl sift the dry ingredients , flour, salt ,baking powder and then make a well. In another separate bowl whisk together the egg yolks, milk, oil and water . Then add into the centre of the flour well and whisk it all together .
4. In the stand mixer place the wire whisk attachment and place the eggwhites and the cream of tartar beat until doubled in size then gradually add the sugar till it reaches the stiff peak stage .
5. Fold in the eggyolk mixture gently without knocking off the bubbles of the egg white mix.
6. Fill in the muffin tin about1/2 full . Bake for 20 minutes at 180 degrees C in a fan forced oven. The centres should spring back when lightly touched .
7. Once baked cool the pan in wire rack for 10 minutes the transfer to the wire rack and spread the butter , sprinkle with sugar and grated cheese while still warm.
Enjoy perfect for picnic and its also a much softer version of the good old cupcake !.
